  • 3 pounds boneless skinless chicken breasts (about 4 large)
  • 4 ounces chicken stock, about 1/2 cup
  • 3 tablespoons Mexican seasoning blend, store-bought or homemade
  • 1 tablespoon kosher salt
  • 1 teaspoon red pepper flakes
  • 8 ounces cream cheese, cut into 1-inch cubes (1 brick)
  • 8 ounces shredded Mexican cheese blend, about 2 cups

Instructions

  1. Place the chicken breasts in a single layer in a 6-quart slow cooker.
  2. Pour the chicken stock evenly over the chicken.
  3. Sprinkle the Mexican seasoning blend, kosher salt, and red pepper flakes on top of the chicken.
  4. Cut the cream cheese into cubes and scatter over the seasoned chicken.
  5. Cover and cook on Low for 4 to 6 hours or on High for 2 to 3 hours until the chicken is fully cooked.
  6. Use a slotted spoon to transfer the chicken to a stand mixer, letting excess sauce drain off.
  7. With the paddle attachment, shred the chicken on low speed for about 20 to 30 seconds until it's tender and shredded.
  8. Return the shredded chicken to the slow cooker, stirring to coat in the sauce.
  9. Sprinkle the shredded Mexican cheese blend over the chicken and cover to melt for 5 to 10 minutes.
  10. Stir the melted cheese into the chicken until smooth and creamy, adjusting salt to taste.
  11. Serve over rice, in tortillas, or lettuce wraps, and top with fresh cilantro or avocado.
