- 2 pounds brussels sprouts, trimmed and halved
- 8 slices thick-cut bacon, chopped
- 2 tablespoons pure maple syrup
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- ½ teaspoon garlic powder
- zest of one lemon
- 1 tablespoon lemon juice
- optional: flaky sea salt for serving
- optional: chopped fresh parsley
Instructions
- Preheat the oven to 425°F and line a large rimmed baking sheet with parchment paper if desired.
- Prepare the Brussels sprouts by removing loose outer leaves, trimming the ends, and halving each sprout through the stem.
- In a large bowl, toss the Brussels sprouts and chopped bacon with olive oil, maple syrup, salt, pepper, and garlic powder. Spread the mixture in a single layer on the baking sheet, aiming to place cut-side down as many Brussels sprouts as possible.
- Roast in the oven for 30-40 minutes, stirring halfway through, until the Brussels sprouts are golden brown and crispy along the edges, and the bacon is crispy.
- Remove from the oven and toss the hot Brussels sprouts with lemon zest and lemon juice. If desired, finish with flaky sea salt and fresh parsley before serving.
