- 2–3 large king oyster mushrooms
- 2 tablespoons (30 ml) olive oil
- 2 cloves garlic, minced
- 1/4 cup (40 g) minced shallots or onion
- 1 tablespoon (15 ml) low-sodium soy sauce or gluten free tamari, or to personal taste
- 2 teaspoons (10 ml) sesame oil, or to personal taste
- 1 tablespoon (15 ml) chili crunch or chili oil, or to personal taste
- handful chopped fresh herbs (cilantro, thai basil, mint)
Instructions
- Thinly slice or julienne the mushrooms into noodle lengths using a sharp knife or a julienne tool.
- Bring a large pot of water to a boil and add the raw mushroom noodles.
- Boil noodles for about 3 minutes, then taste to check if it’s to your preferred texture. If desired, continue boiling until they reach your liking.
- Drain noodles and cool them in a bowl of ice water for about 5 minutes.
- Remove noodles from the water and gently squeeze out any excess moisture.
- Store in an airtight container with a paper towel, or proceed to cooking immediately.
- Heat a pan over medium-high heat, adding the olive oil, minced garlic, and shallots/onion. Cook until the garlic is lightly golden.
- Add the cooked noodles and stir continuously for about 3-5 minutes, until moisture is mostly cooked off.
- Add low-sodium soy sauce and sesame oil, stirring well to coat the noodles. Cook for an additional minute.
- Taste for seasoning and adjust if necessary.
- Transfer noodles to a bowl, drizzling with chili crunch, and garnish with fresh chopped herbs before serving.
