  • 16 oz. velveeta cut into 1-inch cubes
  • ½ cup freshly shredded pepper jack cheese
  • 14.5 oz. rotel tomatoes (1 can) – do not drain
  • 1 cup black beans drained and rinsed
  • ¼ cup chopped fresh cilantro

Instructions

  1. Brown the sausage in a medium skillet over medium heat, seasoning with salt and pepper to taste.
  2. Once cooked through, add the beer and let it reduce for 3-4 minutes, stirring occasionally.
  3. Stir in the Velveeta and pepper jack cheese, melting for about 3-5 minutes completely.
  4. Add the tomatoes, beans, and cilantro once melted and mix well.
  5. Serve immediately with homemade chips.
