Ingredients
- 1 tablespoon gelatin or 1 packet knox gelatin
- ¼ cup water
- 2 tablespoons lemon juice
- 2 tablespoons lemon zest from about 2 lemons
- 1/2 cup sugar
- 2 cup cream
- 1 cup skim milk
Instructions
- In a small bowl, sprinkle gelatin over the water and allow it to soften.
- In a medium saucepan, combine the remaining ingredients and heat just below boiling. Remove from heat.
- Stir in the softened gelatin until fully dissolved; this may take a few minutes.
- Strain the mixture into a pouring vessel, pressing to extract maximum flavor.
- Pour the mixture into ramekins or decorative serving glasses.
- Refrigerate for about 4 hours or overnight until thickened.
- To unmold, run a thin knife along the edge of the ramekin, invert onto a small plate, and shake gently to release.
- Serve garnished with whipped cream, fruit syrup, or fruit as desired.
