Ingredients

  • 4 egg yolks
  • 1/2 cup fresh lemon juice
  • 1/2 cup butter, cut into cubes

Instructions

  1. Pulse the sugar and lemon zest together in a small food processor until well combined (optional).
  2. Whisk the sugar and egg yolks together until pale yellow.
  3. Gradually whisk in the lemon juice until fully incorporated.
  4. Place the pan over medium-low heat, whisking constantly, cook for 10-15 minutes until thickened.
  5. Remove from heat and stir in the cubed butter until fully melted and incorporated.
  6. If desired, strain the mixture for extra smoothness.
  7. Pour into a bowl or measuring cup and cover with plastic wrap touching the curd to prevent a film.
  8. Chill in the fridge until set, then store in an airtight container.
