  • 2 tbsp flour
  • 67 cups chicken broth
  • 1 cup dried orzo pasta
  • juice of 1 lemon
  • 3 cups cooked shredded chicken breast
  • 8 oz. fresh baby spinach
  • grated Parmesan cheese
  • chopped fresh parsley
  • lemon wedges

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add diced onion, carrots, celery, salt, and pepper, and sauté until softened.
  3. Mix in minced garlic and oregano, cooking until fragrant, then stir in the flour.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the orzo and cook for 6-7 minutes until it's tender.
  6. Stir in lemon juice and shredded chicken. Adjust seasoning with more broth, salt, pepper, or lemon juice to taste.
  7. Top with grated Parmesan cheese and fresh parsley, and serve with lemon wedges.
