- 15 oz. ricotta cheese
- 1 large egg
- 2 cups mozzarella cheese, freshly shredded
- ¾ cup parmesan cheese, freshly grated
- 1 teaspoon each: dried oregano, basil
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon olive oil
- 1 yellow onion, finely diced
- Salt/pepper
- ¾ lb. ground beef
- ¾ lb. ground italian sausage, hot or mild
- 3 cloves garlic, minced
- ½ cup chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon hot sauce
- 1 teaspoon worcestershire sauce
- 40 oz. marinara sauce, see notes
- ¾ lb. radiatori pasta, see notes
- 2 ¼ cups mozzarella cheese, freshly shredded
Instructions
- In a medium bowl, mix the ricotta cheese ingredients and set aside. Preheat the oven to 375°F.
- In a pan, heat olive oil and cook the diced onions until softened for about 10 minutes.
- Season the ground beef with salt and pepper. Add the beef and sausage, cooking until browned, about 8-10 minutes. Add garlic in the final minute. Drain excess grease.
- Pour in the chicken broth, scraping the pot to combine flavors. Add tomato paste, hot sauce, Worcestershire sauce, and marinara. Bring to a boil, then reduce and simmer, partially covered.
- Boil the pasta for one minute less than the package suggests, then drain.
- Stir the pasta into the meat sauce gently to combine.
- Layer half the pasta/meat sauce mixture in a greased 9×13-inch dish. Dollop and spread half of the ricotta on top.
- Add the rest of the pasta/meat mixture followed by the remaining ricotta. Sprinkle with 2 ¼ cups mozzarella cheese.
- Cover loosely with foil sprayed with nonstick cooking spray and bake for 25 minutes. Remove the foil, bake for an additional 15 minutes, and broil for a moment if you want a crispy top.
- Garnish with fresh parsley, let it sit for 5 minutes, and serve with garlic bread.
