Ingredients

  • 3/4 cup egg whites, about 6–7 large egg whites
  • 1 cup powdered low-carb sweetener, swerve confectioners or powdered erythritol
  • 1/2 tsp vanilla extract
  • 2 tsp cornstarch, optional
  • 1 tsp white vinegar, optional
  • 2/3 cup heavy cream
  • 1 tbsp powdered low-carb sweetener, or to taste
  • 1/2 cup fresh berries, raspberries, strawberries, blueberries, or blackberries

Instructions

  1. Preheat the oven to 250°F and line a baking sheet with parchment paper, drawing two 6-inch circles as a guide.
  2. Beat the egg whites on high speed until frothy. Gradually add the sweetener one tablespoon at a time while continuing to beat on high for 6–7 minutes until stiff peaks form.
  3. Add cornstarch, vanilla extract, and vinegar to the egg whites and beat briefly to incorporate.
  4. Divide the prepared meringue evenly between the two circles drawn on the parchment paper. Create a small well in the center of each meringue and smooth the sides with a spatula.
  5. Bake in the oven for 55–60 minutes, until the meringues just begin to color on the outside. Turn off the oven, carefully remove the pavlovas, and allow to cool on the baking sheet for 30 minutes before transferring to a cooling rack to cool completely.
  6. While pavlovas cool, beat the heavy cream with sweetener until stiff peaks form. Spoon the whipped cream onto each pavlova and top with fresh berries. Serve immediately.
