  • 1 tsp vanilla extract
  • 1/2 cup strong brewed coffee or espresso
  • 1/2 cup unsalted butter (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/3 cup cocoa powder (for frosting)
  • 23 tbsp milk (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, combine eggs, milk, vegetable oil, vanilla extract, and brewed coffee, mixing until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  5. Spoon the batter into the prepared liners, filling each about two-thirds full.
  6. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  8. To prepare the frosting, beat the butter until creamy, then mix in the powdered sugar and cocoa powder.
  9. Add milk and continue beating until the frosting is smooth and fluffy.
  10. Frost the cooled cupcakes and decorate as desired before serving.
