  • 1/2 cup shredded pepper jack cheese
  • 1/3 cup finely chopped onion
  • 2 garlic cloves, finely minced
  • 2 tablespoons chopped cilantro
  • 1 jalapeño pepper, finely diced
  • 2 teaspoons worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon fresh ground black pepper
  • 2 pounds (32 oz) 93% lean ground turkey*
  • optional: 6 slices pepper jack cheese
  • for serving: hamburger buns, sliced jalapeño, spicy mayo, guacamole, tomato, lettuce, etc.

Instructions

  1. Whisk together the egg, pepper jack cheese, onion, garlic, cilantro, jalapeño, Worcestershire sauce, salt, smoked paprika, cumin, and black pepper in a large bowl.
  2. Gently mix in the ground turkey using hands or a spatula until just combined. Form into 6 equal patties, about 6 ounces each, making a small indentation in the center of each.
  3. Put the patties on a parchment paper-lined baking sheet and cover tightly. Refrigerate for at least 30 minutes or up to 24 hours to help them maintain shape and enhance flavor. (Patties can be frozen for up to 3 months; thaw in the refrigerator before cooking.)
  4. Heat a grill on high and grease the grates with vegetable oil. Place the cold patties on the grill and cover. Cook for 5 minutes, then flip and grill for another 3 minutes or until they reach 165°F (74°C). If using cheese, add it during the last 30 seconds of grilling.
  5. Serve the burgers on buns with preferred toppings.
