- 10–12 fresh jalapenos (sliced into thin rounds)
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 cup milk or 2 eggs
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- oil for frying
Instructions
- Wash and dry the jalapenos, then slice them into thin, even rounds.
- In a bowl, mix flour, cornmeal, salt, paprika, garlic powder, and black pepper.
- In another bowl, add milk or whisk eggs.
- Dip each jalapeno slice into the liquid mixture, then coat evenly with the dry mixture.
- Heat oil in a deep pan to 350°F (175°C).
- Fry the coated jalapeno slices in batches for 2–3 minutes until golden and crispy.
- Remove and place on paper towels to drain excess oil.
- Serve hot with your favorite dipping sauce.
