  • 1 cup finely torn fresh white bread, crusts removed or fine italian breadcrumbs
  • ½ cup whole milk
  • ½ cup olive oil
  • 2 medium onions, finely chopped
  • 4 tsp minced garlic from about 4 large cloves
  • 2 cans diced, crushed, or whole tomatoes, with juices 28 oz each
  • 2 tsp kosher salt
  • ¼ tsp baking soda secret ingredient – trust me!
  • 2 sprigs fresh basil optional
  • 2 large eggs
  • 1 lb ground pork
  • 1 lb ground beef
  • ¼ cup finely grated parmigiano reggiano
  • 2 tbsp minced fresh parsley
  • 2 tsp minced fresh oregano or 1/2 tsp dried
  • 2 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp oil for frying
  • fresh basil
  • a splash soy sauce

Instructions

  1. In a large bowl, combine the torn bread and milk, allowing it to sit while preparing the rest of the ingredients.
  2. Heat olive oil in a skillet, sauté the onions until soft. Add minced garlic and cook until fragrant.
  3. In the large bowl with the milk and bread, mix in tomatoes, kosher salt, baking soda, and optional basil.
  4. Add the eggs, ground pork, and ground beef to the mixture, along with grated cheese, parsley, oregano, remaining salt, and black pepper. Combine well without overmixing.
  5. Form the mixture into meatballs, then place them onto a baking sheet.
  6. In the same skillet, add oil for frying. Brown the meatballs in batches until golden on all sides, then transfer to a baking dish.
  7. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until cooked through.
  8. Serve with fresh basil or a splash of soy sauce, if desired.
