  • 3 lbs pork butt or shoulder, trimmed and cut into large pieces
  • 2 tablespoons avocado oil
  • ¾ cup water or chicken broth
  • 2 cups bbq sauce, divided
  • ⅓ cup apple cider vinegar
  • ½ teaspoon liquid smoke, optional
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 teaspoon ground mustard
  • 1 teaspoon cumin

Instructions

  1. In a small bowl, combine brown sugar, garlic powder, onion powder, smoked paprika, salt, black pepper, ground mustard, and cumin to create a spice rub.
  2. Rub the spice mix all over the pork pieces until they are evenly coated.
  3. Set the Instant Pot to sauté mode and add avocado oil.
  4. Working in batches, brown the pork pieces on all sides, being careful not to overcrowd the pot.
  5. Once browned, remove the pork and deglaze the pot with a splash of water or chicken broth, scraping up any browned bits.
  6. Add the remaining water or chicken broth, 1 cup of BBQ sauce, apple cider vinegar, and liquid smoke (if using) to the pot. Stir well.
  7. Return the browned pork to the pot, making sure it's submerged in the liquid.
  8. Seal the Instant Pot lid and cook on high pressure for 60 minutes.
  9. Allow the pressure to naturally release for 20 minutes, then release any remaining pressure manually.
  10. Once done, drain excess liquid based on preference, then shred the pork using two forks and discard any large pieces of fat.
  11. Stir in the remaining 1 cup of BBQ sauce and serve as desired.
