  • ¾ cup (150g) granulated sugar

  • 1 large egg
  • ¼ cup (60ml) oil
  • ⅓ cup (80ml) whole milk
  • 1 teaspoon (5ml) pure vanilla extract
  • ½ cup (120ml) hot coffee
  • 5 oz (142g) marshmallows
  • 3 tablespoon (42g) unsalted butter
  • 1 cup (237ml) 35% heavy whipping cream
  • 5 oz (142g) semisweet dark chocolate
  • ⅓ cup plus 1 tbsp (95ml) 35% heavy whipping cream
  • 1 teaspoon (7ml) honey or corn syrup

Instructions

  1. Preheat the oven to 325°F and prepare an 8×8-inch baking pan with parchment paper.
  2. Sift the flour, cocoa powder, baking powder, and baking soda into a medium bowl; then mix in the sugar and salt.
  3. Create a well in the dry ingredients and add oil, egg, milk, and vanilla, whisking until combined.
  4. Incorporate the hot coffee gradually into the batter until smooth; it will be thin.
  5. Spread the batter evenly into the pan and bake for 20-25 minutes, until a skewer comes out clean. Cool completely in the pan and trim the top if needed.
  6. For the filling, melt butter with marshmallows in a microwave, stirring until smooth; cool slightly.
  7. Whip cold cream until stiff peaks form, then mix a portion into the marshmallow mixture and fold in the remainder gently.
  8. Slice the cooled cake horizontally in half, spread most of the marshmallow filling on the bottom layer, and place the top layer on.
  9. Prepare the ganache by heating cream and whisking it over chopped chocolate until smooth. Pour it over the cake and let it set.
  10. Pipe the reserved marshmallow filling on top in decorative patterns before slicing and serving.
