- zest from 2 lemons
- ¼ cup fresh lemon juice
- 2 tablespoons honey
- 3 tablespoons water
- 1 lb. strawberries, sliced
- 6 ounces blueberries
- 6 ounces raspberries
- 6 ounces blackberries
- 1 cup grapes, halved
Instructions
- In a small saucepan, combine lemon zest, lemon juice, honey, and water. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for about 5 minutes, whisking frequently until the dressing thickens slightly.
- Remove from heat and allow to cool completely for at least 25 minutes.
- Wash and dry all the fruit thoroughly. In a large bowl, gently toss the washed fruit together.
- If you plan to serve within 1 to 2 hours, pour the cooled dressing over the fruit and toss to coat. Cover and refrigerate until serving. If serving later, keep the dressing separate and add it just before serving, garnishing with extra lemon zest or fresh mint leaves if desired.
