  • 5 lbs chicken drumsticks
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1/2 teaspoon ground pepper
  • 2 tablespoons olive or avocado oil divided
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 1/4 cup ketchup
  • 1/4 cup water
  • 8 cloves garlic minced
  • 1 teaspoon cornstarch

Instructions

  1. Preheat the oven to 350ºF.
  2. Pat the chicken dry and carefully pull the skin from the drumsticks using a paper towel.
  3. Mix the onion powder, salt, paprika, and pepper together. Drizzle 1 tablespoon of the oil over the chicken and season with the spice mixture.
  4. In a bowl, combine the honey, balsamic vinegar, ketchup, water, and minced garlic.
  5. Heat a large Dutch oven over medium-high heat and add the remaining oil. Brown the chicken in batches and set aside.
  6. Once browned, return all the chicken to the Dutch oven. Pour the sauce over the chicken, tossing to coat. Cover the pan and transfer to the oven.
  7. Bake for 20 minutes, then rotate and baste the chicken with the sauce. Cover and cook for another 20 minutes.
  8. When fully cooked, remove from the oven and switch to broil. Transfer the chicken to a foil-lined baking sheet.
  9. Whisk a few tablespoons of the sauce with cornstarch in a small bowl.
  10. Bring the Dutch oven sauce to a boil. Mix in the cornstarch mixture and boil until thickened. Gently return the chicken, stirring to coat.
  11. Finally, transfer the chicken back to the baking sheet and broil for a minute or two until lightly charred. Brush with any remaining sauce before serving.
