- 5 lbs chicken drumsticks
- 1 1/2 teaspoons onion powder
- 1 teaspoon kosher salt
- 1 teaspoon paprika
- 1/2 teaspoon ground pepper
- 2 tablespoons olive or avocado oil divided
- 1/4 cup honey
- 1/4 cup balsamic vinegar
- 1/4 cup ketchup
- 1/4 cup water
- 8 cloves garlic minced
- 1 teaspoon cornstarch
Instructions
- Preheat the oven to 350ºF.
- Pat the chicken dry and carefully pull the skin from the drumsticks using a paper towel.
- Mix the onion powder, salt, paprika, and pepper together. Drizzle 1 tablespoon of the oil over the chicken and season with the spice mixture.
- In a bowl, combine the honey, balsamic vinegar, ketchup, water, and minced garlic.
- Heat a large Dutch oven over medium-high heat and add the remaining oil. Brown the chicken in batches and set aside.
- Once browned, return all the chicken to the Dutch oven. Pour the sauce over the chicken, tossing to coat. Cover the pan and transfer to the oven.
- Bake for 20 minutes, then rotate and baste the chicken with the sauce. Cover and cook for another 20 minutes.
- When fully cooked, remove from the oven and switch to broil. Transfer the chicken to a foil-lined baking sheet.
- Whisk a few tablespoons of the sauce with cornstarch in a small bowl.
- Bring the Dutch oven sauce to a boil. Mix in the cornstarch mixture and boil until thickened. Gently return the chicken, stirring to coat.
- Finally, transfer the chicken back to the baking sheet and broil for a minute or two until lightly charred. Brush with any remaining sauce before serving.
