- 1 lb fresh strawberries, washed and patted dry (about 24 large strawberries)
- ½ cup plain full-fat greek yogurt
- 2 oz cream cheese, softened to room temperature
- 1 scoop vanilla whey protein powder
- Crushed graham crackers, for serving – I used Simple Mills sweet thins
Instructions
- Cut the tops off the strawberries and trim a small sliver off the bottom for stability.
- Hollow out the center of each strawberry using a small spoon or knife and set aside.
- In a mixing bowl, combine the Greek yogurt and softened cream cheese; whip until smooth and fluffy.
- Mix in the vanilla whey protein powder until fully combined.
- Use a piping bag to fill each hollowed strawberry with the cheesecake mixture, or spoon it in if preferred.
- Top the filled strawberries with crushed graham crackers and refrigerate until serving.
