Instructions

  1. In a medium heavy-bottomed pot, combine rice, water, whole milk, cinnamon stick, lime peel, and salt. Bring to a gentle simmer over medium heat while stirring frequently.
  2. Whisk together the protein powder with 3 tablespoons of warm milk in a separate bowl until fully dissolved, then add it to the pot to avoid clumping.
  3. Lower the heat and let it cook uncovered for 25 to 30 minutes, stirring often, until the rice becomes soft and the mixture thickens to a creamy consistency.
  4. Once cooked, remove the pot from heat. Discard the cinnamon stick and lime peel. Stir in the Greek yogurt and vanilla extract until smooth and well mixed.
