  • 1½ tablespoons olive oil , divided
  • 2 cups cups ½-inch diced yukon gold potatoes, about 14 ounces
  • 1 teaspoon kosher salt, divided
  • ground black pepper, to taste
  • 1 pound ground turkey, i used 93%
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon poultry seasoning , or dried thyme and sage
  • 2 cups loosely packed baby spinach, roughly chopped after measuring
  • 8 large eggs
  • 1 cup cottage cheese, full-fat or low-fat work best
  • ½ cup grated cheddar cheese

Instructions

  1. Preheat the oven to 425℉. Grease a 9×9 inch baking dish with cooking spray or a little oil.
  2. Put diced potatoes in the baking dish. Drizzle with ½ tablespoon of oil and sprinkle with ¼ teaspoon of salt and black pepper. Toss to coat and spread evenly. Roast until potatoes soften and brown, about 15 minutes.
  3. Cook the ground turkey in a large skillet with the remaining 1 tablespoon of oil over medium-high heat. Season with ¾ teaspoon of salt, black pepper, onion powder, garlic powder, paprika, and poultry seasoning. Cook until the turkey is done, breaking it into small pieces, about 7 minutes.
  4. Once the potatoes are tender, remove from the oven and reduce temperature to 375℉. Add cooked turkey and chopped spinach to the baking dish and stir to mix. Let cool slightly while preparing the egg mixture.
  5. In a bowl, whisk together eggs, cottage cheese, grated cheese, and black pepper until combined, then pour over the turkey and potatoes.
  6. Bake for 25–35 minutes, or until the top is golden and the center is set. Bake time may vary with cottage cheese fat content and the baking dish type.
  7. Allow to cool for 10 minutes before slicing into 6 servings. Serve warm or at room temperature. Store leftovers in the fridge for up to 4 days, covered with foil.
