- 2 cups cups ½-inch diced yukon gold potatoes, about 14 ounces
- 1 teaspoon kosher salt, divided
- ground black pepper, to taste
- 1 pound ground turkey, i used 93%
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon poultry seasoning , or dried thyme and sage
- 2 cups loosely packed baby spinach, roughly chopped after measuring
- 8 large eggs
- 1 cup cottage cheese, full-fat or low-fat work best
- ½ cup grated cheddar cheese
Instructions
- Preheat the oven to 425℉. Grease a 9×9 inch baking dish with cooking spray or a little oil.
- Put diced potatoes in the baking dish. Drizzle with ½ tablespoon of oil and sprinkle with ¼ teaspoon of salt and black pepper. Toss to coat and spread evenly. Roast until potatoes soften and brown, about 15 minutes.
- Cook the ground turkey in a large skillet with the remaining 1 tablespoon of oil over medium-high heat. Season with ¾ teaspoon of salt, black pepper, onion powder, garlic powder, paprika, and poultry seasoning. Cook until the turkey is done, breaking it into small pieces, about 7 minutes.
- Once the potatoes are tender, remove from the oven and reduce temperature to 375℉. Add cooked turkey and chopped spinach to the baking dish and stir to mix. Let cool slightly while preparing the egg mixture.
- In a bowl, whisk together eggs, cottage cheese, grated cheese, and black pepper until combined, then pour over the turkey and potatoes.
- Bake for 25–35 minutes, or until the top is golden and the center is set. Bake time may vary with cottage cheese fat content and the baking dish type.
- Allow to cool for 10 minutes before slicing into 6 servings. Serve warm or at room temperature. Store leftovers in the fridge for up to 4 days, covered with foil.
