- 2 ½ oz (70g) high quality semisweet chocolate (minimum 55% cocoa and up to 65%)
- 2 tbsp (30ml) hot water
- ½ cup (130g) natural drippy smooth peanut butter (no sugar added)
- 2 tablespoon (30ml) maple syrup
- ½ cup (50g) fine almond flour
- 1 tablespoon powdered sugar (optional)
- â…› teaspoon salt
- 6 oz (170g) pure white chocolate
- 1 teaspoon (5g) coconut oil
- ¼ teaspoon matcha powder
- blue gel food coloring
- 1 teaspoon (2g) cocoa powder
- 2 teaspoon (10ml) hot water
Instructions
- Melt the semisweet chocolate by finely chopping it and placing it in a heatproof bowl. Pour 2 tablespoons of hot water over it and let it stand for a minute, then whisk until smooth. Heat gently if necessary until fully melted.
- Allow the ganache to cool at room temperature for 30 minutes, then cover and set aside for a minimum of 2 hours, do not refrigerate.
- Once set, scoop out small servings of ganache, mold into balls, and freeze for about 15 minutes until firm.
- Prepare the peanut butter filling by mixing together peanut butter, maple syrup, almond flour, optional powdered sugar, and salt in a bowl. Chill in the freezer for 15 minutes.
- Shape the chilled peanut butter filling around each frozen ganache ball to form an egg shape and place on a parchment-lined baking sheet. Freeze again to firm up.
- Melt white chocolate and coconut oil over simmering water and stir until smooth. Add blue food coloring as desired.
- Dip each egg into the melted chocolate using a fork, letting excess chocolate drip off before placing back on parchment to set.
- For decorating, mix cocoa powder and hot water, then flick the mixture over the set eggs for a speckled look.
