- 1 cup uncooked orzo
- 1 (14.5-oz) can tomato sauce
- ¾ cup can chicken broth
- 6 ounces whole milk ricotta cheese about ¾ cup
- 2 teaspoons italian seasoning
- ½ teaspoon onion powder
- ¼ cup fresh basil leaves or ½ teaspoon dried basil
- 4 ounces shredded mozzarella cheese about 1 cup
- salt and pepper to taste
- red pepper flakes optional for serving
- chopped fresh herbs (like parsley or basil) optional for serving
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the ground turkey, cooking until browned and fully cooked.
- Incorporate the sliced zucchini, and sauté until tender.
- Pour in the uncooked orzo, tomato sauce, and chicken broth, stirring to combine.
- Bring the mixture to a boil, then reduce heat and cover, simmering until the orzo is cooked and has absorbed most of the liquid.
- Stir in the ricotta cheese, italian seasoning, onion powder, and fresh basil, blending everything thoroughly.
- Top with shredded mozzarella cheese and let it melt before serving.
