- 4 ears fresh corn on the cob husks on
- 4 tbsp butter room temperature
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp kosher salt
- ¼ tsp onion powder
- ¼ tsp dried thyme
- ¼ tsp cayenne pepper
- 2 tbsp grated parmesan cheese
- ¼ cup chopped green onions
Instructions
- Soak the ears of corn (husks on) in a large bowl of water for at least 30 minutes, weighing them down if necessary.
- In a small bowl, mix the softened butter with the paprika, garlic powder, dried oregano, kosher salt, onion powder, dried thyme, and cayenne pepper until well combined.
- Preheat the grill to medium heat, around 350°-375°F.
- Gently pull back the husks of the corn but do not remove them. Discard the silk from each ear of corn.
- Evenly rub about 1 tablespoon of the Cajun butter mixture over each ear's kernels.
- Return the husks back into position and tie them closed with string.
- Place the corn on the grill and cook for 25-30 minutes, turning every 5-6 minutes. (It’s normal for the husks to become brown and burnt.)
- Once cooked, remove the corn from the grill and let it cool slightly.
- Carefully pull back the husks and discard them.
- Before serving, sprinkle parmesan cheese and chopped green onions on top.
