- ¼ cup butter
- 10 eggs

Instructions
- Preheat the oven to 400°F and melt ¼ cup butter in a 9 X 13-inch baking dish.
- In a large bowl, whisk together 10 eggs and 2 egg whites until fluffy.
- Add ½ cup all-purpose flour and 1 teaspoon baking powder, whisk until smooth.
- Stir in the drained diced green chiles, chopped onion, chopped red bell pepper, cottage cheese, and shredded Monterey Jack cheese until well combined. Season with black pepper.
- Pour the mixture into the prepared baking dish and bake for 20 minutes.
- Lower the oven temperature to 350°F and continue baking for an additional 45-50 minutes, or until the eggs are set.
