  • 10 eggs
  • 2 egg whites
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 8-ounce cans diced green chiles, drained
  • ½ cup finely chopped yellow onion
  • ½ cup finely chopped red bell pepper
  • 4 cups cottage cheese (1 quart)
  • 8 ounces shredded monterey jack cheese
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F and melt ¼ cup butter in a 9 X 13-inch baking dish.
  2. In a large bowl, whisk together 10 eggs and 2 egg whites until fluffy.
  3. Add ½ cup all-purpose flour and 1 teaspoon baking powder, whisk until smooth.
  4. Stir in the drained diced green chiles, chopped onion, chopped red bell pepper, cottage cheese, and shredded Monterey Jack cheese until well combined. Season with black pepper.
  5. Pour the mixture into the prepared baking dish and bake for 20 minutes.
  6. Lower the oven temperature to 350°F and continue baking for an additional 45-50 minutes, or until the eggs are set.
