  • 1 cup cauliflower florets
  • 1 cup mushrooms halved
  • 1 cup green beans halved
  • 1 cup brussels sprouts halved
  • 1 cup red pepper chopped
  • 1 cup onion chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon pepper
  • 2 tablespoons pine nuts toasted
  • 1/4 cup lemon tahini dressing
  • 2 tablespoons balsamic glaze
  • 1/4 cup tahini well-stirred
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1/4 teaspoon kosher salt
  • 23 tablespoons cold water to thin

Instructions

  1. Cook the farro according to package instructions. For added flavor, use broth instead of water.
  2. Chop the vegetables and arrange them on a rimmed baking sheet. Drizzle olive oil over them, season with salt and pepper, or other desired seasonings, and roast at 400°F for about 20 minutes until tender.
  3. While the farro cooks and vegetables roast, toast the pine nuts in a small skillet over low heat, stirring frequently to prevent burning.
  4. Prepare the lemon tahini dressing by mixing tahini, lemon juice, minced garlic, and salt. Gradually whisk in cold water, one tablespoon at a time, until the desired consistency is reached.
  5. To serve, divide the farro, roasted vegetables, toasted pine nuts, dressing, and balsamic glaze into bowls as desired.
