- 1 cup brown sugar
- 1 cup evaporated milk
- 1/2 cup butter cut into chunks
- 3 egg yolks
- 2 cups sweetened, shredded coconut
- 1 cup toasted pecans roughly chopped
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 1/4 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 oz german chocolate
- 1 cup boiling water
- 1/2 cup neutral oil
- 1/2 cup buttermilk
- 1 3/4 cup sugar
- 4 eggs
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, mix brown sugar, evaporated milk, butter, and egg yolks over medium-low heat, stirring constantly until it boils and thickens for about 5 minutes.
- Remove from heat and stir in coconut, pecans, vanilla, and salt. Cool the frosting for at least 30 minutes until it thickens.
- Preheat the oven to 350ºF and grease a 9×13-inch baking pan.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- Chop the German chocolate and place it in a heat-proof bowl. Pour boiling water over it and let it soften for 1-2 minutes, then stir until melted.
- Add oil, buttermilk, and sugar to the melted chocolate and mix well. Add eggs one at a time, mixing after each addition, then add vanilla.
- Mix in the dry ingredients until combined.
- Pour the cake batter into the prepared pan and bake for about 35-40 minutes until a tester comes out clean.
- Let the cake cool for 15 minutes, then spread the frosting on top and cool completely before slicing.
