  • salt and pepper to taste

Instructions

  1. Peel the green plantains and cut them into 1-inch thick slices.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Fry the plantain slices until golden brown, about 5 minutes per side. Remove and drain on paper towels.
  3. In a large mixing bowl, place the fried plantains, a pinch of salt, and some garlic. Mash together using a fork or a mortar and pestle until you achieve a chunky texture. Gradually add chicken broth until it reaches your desired consistency.
  4. In the same skillet, heat the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the shrimp to the skillet. Season with paprika, cumin, salt, and pepper. Cook for about 3-4 minutes or until the shrimp turn pink and opaque.
  6. On a serving plate, form a mound of the mofongo and create a well in the center. Pour the garlic shrimp mixture over the mofongo.
