- 4 cups mixed greens or romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1 cup bell peppers, chopped
- 1 lb calamari, cleaned and sliced into rings
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 2 tablespoons fresh parsley, chopped
- salt and pepper to taste
Instructions
- Clean and rinse the calamari, then slice into rings if necessary.
- Boil lightly salted water and cook the calamari for 1–2 minutes.
- Transfer calamari to ice water, then drain and set aside.
- Wash and dry all vegetables thoroughly.
- Chop the lettuce, tomatoes, cucumber, onion, and bell peppers evenly.
- In a bowl, whisk together olive oil, lemon juice, garlic, parsley, salt, and pepper.
- Combine the vegetables and calamari in a large bowl.
- Gradually pour the dressing over the salad.
- Toss gently until everything is evenly coated.
- Serve immediately or slightly chilled.
