Ingredients

  • 120 grams starter
  • 340 grams water
  • 50 grams granulated sugar
  • 4 grams vanilla bean paste
  • 2 grams almond extract
  • 10 grams salt
  • 500 grams bread flour
  • 70 grams jimmy sprinkles

Instructions

  1. Mix all ingredients except the sprinkles and let rest for 30 minutes.
  2. Perform a stretch and fold of the dough.
  3. After 30 minutes, during the second stretch and fold, add the sprinkles to the mixture.
  4. Continue with a third and fourth stretch and fold.
  5. Allow the dough to bulk ferment until it is nearly doubled in size.
  6. Preshape the dough and let it rest for another 30 minutes.
  7. Shape the dough and place it into a banneton for the final rise.
  8. Let the dough rise at room temperature for an hour, then freeze for 20 minutes or refrigerate overnight.
  9. Preheat the oven to 450°F. If using a steel, place a silver cookie sheet on the bottom rack.
  10. Place the dough in the oven, immediately reduce the temperature to 425°F, and bake it covered for 30 minutes.
  11. After 30 minutes, uncover the bread, reduce the temperature to 400°F, and bake for an additional 10-15 minutes, until it reaches 190°F.
