- 120 grams starter
- 340 grams water
- 50 grams granulated sugar
- 4 grams vanilla bean paste
- 2 grams almond extract
- 10 grams salt
- 500 grams bread flour
- 70 grams jimmy sprinkles
Instructions
- Mix all ingredients except the sprinkles and let rest for 30 minutes.
- Perform a stretch and fold of the dough.
- After 30 minutes, during the second stretch and fold, add the sprinkles to the mixture.
- Continue with a third and fourth stretch and fold.
- Allow the dough to bulk ferment until it is nearly doubled in size.
- Preshape the dough and let it rest for another 30 minutes.
- Shape the dough and place it into a banneton for the final rise.
- Let the dough rise at room temperature for an hour, then freeze for 20 minutes or refrigerate overnight.
- Preheat the oven to 450°F. If using a steel, place a silver cookie sheet on the bottom rack.
- Place the dough in the oven, immediately reduce the temperature to 425°F, and bake it covered for 30 minutes.
- After 30 minutes, uncover the bread, reduce the temperature to 400°F, and bake for an additional 10-15 minutes, until it reaches 190°F.
