Ingredients

  • 2 cups strawberries, hulled and halved (quartered if large)
  • 1 cup blueberries, halved if on the larger side
  • 2 kiwis, peeled and diced
  • 1 cup red grapes, halved
  • 1 small pineapple, diced small (about 2–2.5 cups)
  • 1 apple, cored and diced small
  • 2 oranges, supremed (skin and pith removed, just the flesh)
  • 3 tbsp fresh orange juice
  • 1 tbsp fresh lime juice
  • 1 tbsp fresh lemon juice
  • 1 –2 tbsp honey, or sugar, to taste
  • 1 tsp chia seeds
  • 2 –3 tbsp fresh mint, chopped (added just before serving)

Instructions

  1. In a small bowl, whisk together orange, lime, and lemon juices with honey (or sugar). Stir in chia seeds and let sit for at least 10 minutes.
  2. Prepare the fruit by cutting it into similar bite-sized pieces, and supreming the oranges.
  3. In a large serving bowl, combine all the cut fruit.
  4. Drizzle the chia-citrus dressing over the fruit and toss gently to combine.
  5. Before serving, sprinkle the chopped mint on top.
