- 1 tablespoon butter
- 1 pound mixed mushrooms (button, shiitake, maitake, and oyster), chopped bite size
- 2 garlic cloves, minced
- ¼ cup dry white wine (Sauvignon Blanc)
- Handful flat leaf parsley, finely chopped
- Salt and pepper, to taste
Instructions
- In a large skillet over medium high heat, add the butter and olive oil. Once the butter has melted, swirl it to combine with the oil, coating the skillet evenly.
- Add the chopped mushrooms and minced garlic, sautéing for about 7-10 minutes until the mushrooms turn golden brown and caramelized.
- Pour in the white wine, stirring well to deglaze the skillet and scrape up any golden bits.
- Remove from heat and mix in the parsley, seasoning with salt and pepper. Serve the sautéed mushrooms on a plate.
