  • 1 large sweet onion peeled and thinly sliced (3 cups)
  • 1 ½ cups buttermilk
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 quart fry oil peanut or canola

Instructions

  1. Peel the onion and slice it into very thin rings using a mandolin slicer for even slices. Remove the smallest rings from each slice and cut the larger circles in half to form semi-circles.
  2. In a bowl, cover the sliced onion rings with buttermilk. Toss to ensure all rings are coated and set aside to soak.
  3. Heat a large skillet with oil over medium heat, about 1 inch deep, and place a thermometer in the skillet.
  4. In a mixing bowl, combine flour, salt, and pepper, stirring well to mix.
  5. Once the oil reaches 375°F, work in batches to fry the onions. Shake excess buttermilk off the rings, coat in the flour mixture, and gently lower them into the hot oil.
  6. Stir the onion rings immediately with a wooden spoon to prevent sticking and monitor the oil temperature, adjusting to maintain 350-375°F.
  7. Fry the onions for 1-3 minutes until golden brown, then use a skimmer to transfer them to a plate lined with paper towels.
  8. Repeat the frying process with the remaining onion rings and serve the crispy onions warm or at room temperature.
