  • 1/2 tsp black pepper

Instructions

  1. In a large bowl, whisk together olive oil, Worcestershire sauce, red wine vinegar, minced garlic, dried thyme, sea salt, and black pepper.
  2. Coat the flat iron steak in the marinade, then cover and refrigerate for at least 2 hours or up to 24 hours.
  3. Before cooking, take the steak out of the refrigerator 30-60 minutes ahead to reach room temperature.
  4. For stovetop cooking, heat olive oil in a skillet over medium-high heat and sear the steak for 2-3 minutes per side for rare, adjusting time for doneness.
  5. For grilling, preheat the grill on high for at least 10 minutes and grill the steak, also adjusting the time based on the desired doneness.
  6. Let the steak rest for 5-10 minutes on a cutting board before slicing against the grain.
