  • 12 ounces cold light beer or cold water
  • 1 ¼ cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon dried dill or parsley
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 1 quart fry oil (peanut, canola, vegetable)

Instructions

  1. Cut the fish fillets into small 1-1 ½ inch nuggets and place them in a mixing bowl.
  2. Pour the cold beer over the fish and stir gently, allowing the nuggets to soak while you prep the other ingredients.
  3. Heat a large cast-iron skillet over medium heat and add 1 inch of oil to the skillet along with a cooking thermometer.
  4. In another bowl, mix the dry ingredients: flour, salt, dill, onion powder, garlic powder, and cayenne pepper.
  5. Once the oil reaches 350°F, begin breading the fish by lifting 6-10 pieces out of the beer, shaking off excess liquid, and tossing them in the flour mixture.
  6. Carefully place the coated fish nuggets in the hot oil, stirring to prevent sticking, and fry for 3-5 minutes until golden brown.
  7. Use a skimmer to transfer the fried nuggets to a plate lined with paper towels and sprinkle lightly with salt.
  8. Repeat the process with the remaining fish nuggets and serve immediately while warm.
