  • Total Time: 2 hours 40 minutes
  • Yield: 10 servings 1x

Ingredients

Scale
  • 3/4 cup milk, whole or 2%
  • 4 tablespoons unsalted butter, (58 grams or 1/2 stick)
  • 2 tablespoons honey
  • 1 large egg
  • 2 1/4 teaspoons instant yeast (7 grams)
  • 3 cups all-purpose flour (420 grams)
  • 1/2 teaspoon salt
  • 1 1/2 cups shredded apples, squeezed dry
  • 1 cup thick apple butter
  • 2/3 cup brown sugar (135 grams)
  • 1 teaspoon cardamom or cinnamon

Instructions

  1. Heat the milk, cut-up butter, and honey in a small saucepan over medium heat until the butter melts. Stir and let cool to lukewarm.
  2. Whisk in the egg and sprinkle the yeast on top, whisking it in.
  3. In a mixing bowl, combine the flour and salt. Pour the wet ingredients over and mix for 3 to 4 minutes until the dough forms a ball.
  4. Spray a container with non-stick baking release. Shape the dough into a ball and place it in the container, coating both sides. Cover with plastic wrap or a towel.
  5. Allow it to double in size at room temperature or in the oven with the light on, ensuring the temperature remains under 90°F.
  6. Refrigerate the dough overnight or up to 3 days for easier rolling.
