- 2 cups cooked and shredded chicken
- 2 cups shredded Mexican cheese blend
- 1 10 ounce can cream of chicken soup
- 1/2 cup sour cream
- 1 10 ounce can Rotel tomatoes
- 1/2 packet taco seasoning
- 1 large bag Doritos, coarsely crushed
- shredded lettuce, optional
- diced tomato, optional
Instructions
- Preheat your oven to 350°F (177°C) and grease a 2 quart casserole dish.
- In a large bowl, combine the shredded chicken, 1 cup of cheese, cream of chicken soup, sour cream, Rotel tomatoes (undrained), and taco seasoning. Mix this well.
- Layer crushed Doritos across the bottom of the casserole dish until fully covered.
- Spread half of the chicken mixture over the Doritos layer.
- Add another layer of crushed Doritos followed by the remaining chicken mixture.
- Finish with a layer of semi-crushed Doritos and sprinkle the remaining cheese on top.
- Bake in the preheated oven for 25-30 minutes until it’s bubbling hot.
- Once baked, remove from oven and top with optional lettuce and tomato.
