This Doritos Chicken Casserole is packed with mouthwatering flavor and is incredibly easy to prepare. With tender chicken, creamy sauce, and cheesy goodness, this dish is perfect for a quick, satisfying meal any night of the week.

Ingredients

  • 2 cups cooked and shredded chicken
  • 2 cups shredded Mexican cheese blend
  • 1 10 ounce can cream of chicken soup
  • 1/2 cup sour cream
  • 1 10 ounce can Rotel tomatoes
  • 1/2 packet taco seasoning
  • 1 large bag Doritos, coarsely crushed
  • shredded lettuce, optional
  • diced tomato, optional

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a 2 quart casserole dish.
  2. In a large bowl, combine the shredded chicken, 1 cup of cheese, cream of chicken soup, sour cream, Rotel tomatoes (undrained), and taco seasoning. Mix this well.
  3. Layer crushed Doritos across the bottom of the casserole dish until fully covered.
  4. Spread half of the chicken mixture over the Doritos layer.
  5. Add another layer of crushed Doritos followed by the remaining chicken mixture.
  6. Finish with a layer of semi-crushed Doritos and sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for 25-30 minutes until it’s bubbling hot.
  8. Once baked, remove from oven and top with optional lettuce and tomato.
