- 85 g unsalted butter, at room temperature
- 1 teaspoon fine sea salt
- 100 g ham or salami
- 200 g cheese (mixed low-moisture mozzarella and smoked scamorza)
- 1 egg
- 1 tablespoon whole milk
Instructions
- Warm the milk gently until lukewarm.
- In a stand mixer, mix flour with yeast, sugar, and salt (keeping yeast and salt apart).
- Add the egg yolks and warm milk, kneading until a rough dough forms (about 5 minutes).
- Gradually incorporate butter while the mixer is running, kneading for 10 minutes until smooth and elastic, despite a wet appearance.
- Grease a bowl with butter, reshape dough into a ball, and let rise covered for 3 hours until doubled.
