  • ¾ cup cottage cheese
  • ⅓ cup milk
  • ¼ cup chopped roasted Hatch chile peppers (mild) (2 oz.) – half a jar
  • ½ teaspoon Creole seasoning
  • 1 cup frozen broccoli florets
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F and prepare a tart pan with nonstick baking spray.
  2. Crack the 6 eggs into a bowl and then add them to a blender.
  3. Pour in the cottage cheese, milk, chopped Hatch chile peppers, and Creole seasoning before blending for 30 seconds.
  4. Spread the frozen broccoli florets and half of the cheddar cheese in the prepared tart pan.
  5. Pour the blended egg mixture over the broccoli and top with the remaining cheddar cheese.
  6. Bake for 40-45 minutes until set, golden brown, and puffed up, with minimal jiggle.
  7. Allow to cool slightly before slicing and serving.
