- 6 eggs
- ¾ cup cottage cheese
- ⅓ cup milk
- ¼ cup chopped roasted Hatch chile peppers (mild) (2 oz.) – half a jar
- ½ teaspoon Creole seasoning
- 1 cup frozen broccoli florets
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F and prepare a tart pan with nonstick baking spray.
- Crack the 6 eggs into a bowl and then add them to a blender.
- Pour in the cottage cheese, milk, chopped Hatch chile peppers, and Creole seasoning before blending for 30 seconds.
- Spread the frozen broccoli florets and half of the cheddar cheese in the prepared tart pan.
- Pour the blended egg mixture over the broccoli and top with the remaining cheddar cheese.
- Bake for 40-45 minutes until set, golden brown, and puffed up, with minimal jiggle.
- Allow to cool slightly before slicing and serving.
