Ingredients

  • 1 teaspoon salt (optional)
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon italian seasoning
  • 2 pounds boneless, skinless chicken breasts
  • ½ cup finely diced yellow onion
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, drained and chopped
  • 1 cup chicken broth
  • 8 ounce block cream cheese, softened and cubed
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 2 cups fresh spinach
  • fresh basil or parsley (optional, for serving)

Instructions

  1. In a small bowl, combine salt, black pepper, garlic powder, and Italian seasoning, then stir together.
  2. Season the chicken breasts on both sides with the seasoning mixture and place them in the slow cooker.
  3. Add the diced onion, minced garlic, and sun-dried tomatoes over the chicken.
  4. Pour chicken broth around the chicken and add cream cheese on top and around the chicken.
  5. Cover and cook on low for 4-6 hours until chicken is tender and can be easily shredded. Avoid opening the lid frequently.
  6. Remove the chicken from the sauce and either leave it whole or shred it.
  7. Whisk the cream cheese into the broth mixture in the slow cooker until smooth.
  8. Add heavy cream and grated Parmesan cheese and whisk to combine.
  9. Mix cornstarch with cold water until smooth, then whisk it into the sauce.
  10. Stir in fresh spinach, cover, and cook on high for 10-15 minutes until thickened and spinach is wilted.
  11. Return the chicken to the slow cooker, spoon sauce over it, and serve with fresh basil or parsley if desired.
