Ingredients

  • 8 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 packet (1 ounce) ranch seasoning mix
  • 3 cups corn thawed if frozen, drained if canned
  • 1 jalapeno pepper finely diced, seeds removed
  • 1½ cups freshly grated cheddar cheese divided
  • 8 slices bacon cooked and crumbled
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat the oven to 375°F and lightly grease a small baking dish.
  2. In a large bowl, combine cream cheese, sour cream, mayonnaise, and ranch seasoning until smooth.
  3. Add in the corn, diced jalapeño, 1 cup of cheddar cheese, and most of the crumbled bacon, mixing it all together.
  4. Transfer the mixture into the prepared baking dish and sprinkle the remaining cheddar and reserved bacon on top.
  5. Bake for 20 to 25 minutes, until the dip is hot and bubbly.
  6. Once out of the oven, garnish with sliced green onions before serving.
  7. Serve warm alongside Frito's Scoops, tortilla chips, or crackers.
