- 1 cup cottage cheese
- 1/2 cup grated parmesan cheese
- 2 cloves garlic
- 2 tablespoons olive oil
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon italian seasoning
- 8 oz pasta of choice
Instructions
- Bring a pot of salted water to a gentle boil.
- In a blender or food processor, combine cottage cheese, parmesan, garlic, milk, olive oil, salt, pepper, and Italian seasoning. Blend until smooth.
- Drain the pasta, reserving a little pasta water.
- Return the pasta to the pot, pour the sauce over it, and stir gently, adding a splash of reserved pasta water if needed.
- Serve immediately, topped with extra parmesan if desired.
