Ingredients
Scale
- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- In a mixing bowl, combine the cottage cheese, flour, baking powder, and salt. Mix until a soft dough starts to form, using a fork before switching to your hands.
- Transfer the dough to a floured surface and knead gently for 2–3 minutes until the dough is smooth and slightly tacky, avoiding overworking it to keep the texture light.
- Divide the dough into equal portions, rolling each portion into a small ball, then flattening each ball into thin rounds with a rolling pin or your hands.
- Heat a skillet over medium heat with a bit of olive oil. Cook each flatbread for 2–3 minutes on each side until golden brown spots appear and they puff slightly.
- Stack the flatbreads on a plate, covering them to keep warm and enhance the aroma.
