- 6–8 boneless thin pork chops
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp olive oil
- 1 tbsp butter
- 3/4 cup heavy cream
- 2 tbsp Dijon mustard
- 2 tbsp honey
Instructions
- Combine the flour, salt, and pepper in a shallow dish. Dredge the pork chops in the mixture on both sides, shaking off any excess flour. Set aside.
- In a large skillet over medium-high heat, add olive oil and butter. Sear the pork chops for 60-75 seconds per side until they start to turn golden brown. Remove them from the skillet and set aside.
- Lower the heat to medium and in the same skillet, add the heavy cream, Dijon mustard, and honey. Whisk until well combined and bring to a simmer.
- Return the pork chops to the skillet, nestling them in the sauce. Cover and let simmer for 5-6 minutes, or until the internal temperature reaches 145°F (63°C).
- Take the skillet off the heat and serve the pork chops immediately.
