  • 68 boneless thin pork chops
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3/4 cup heavy cream
  • 2 tbsp Dijon mustard
  • 2 tbsp honey

Instructions

  1. Combine the flour, salt, and pepper in a shallow dish. Dredge the pork chops in the mixture on both sides, shaking off any excess flour. Set aside.
  2. In a large skillet over medium-high heat, add olive oil and butter. Sear the pork chops for 60-75 seconds per side until they start to turn golden brown. Remove them from the skillet and set aside.
  3. Lower the heat to medium and in the same skillet, add the heavy cream, Dijon mustard, and honey. Whisk until well combined and bring to a simmer.
  4. Return the pork chops to the skillet, nestling them in the sauce. Cover and let simmer for 5-6 minutes, or until the internal temperature reaches 145°F (63°C).
  5. Take the skillet off the heat and serve the pork chops immediately.
