  • 1 cup flaked sweetened coconut
  • 3/4 cup unsalted butter, at room temperature
  • 3 cups confectioners’ sugar
  • 3 tablespoons heavy cream or whole milk, at room temperature
  • 1 1/2 teaspoons pure vanilla extract

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
  3. In a large bowl, use a mixer to beat together butter, brown sugar, and granulated sugar until light and creamy. Add egg, vanilla extract, and coconut extract, mixing until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined, then fold in oats and flaked coconut.
  5. Scoop tablespoon-sized balls of dough onto the prepared sheets, keeping 2 inches apart.
  6. Bake for 8 to 10 minutes until edges are golden and centers are set. Avoid overbaking. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  7. Prepare the filling while the cookies cool. Beat butter in a large bowl until creamy. Gradually mix in confectioners’ sugar followed by heavy cream, vanilla, and a pinch of salt. Beat until light and fluffy.
  8. Spread or pipe the filling on the flat side of one cookie and top with another cookie to create a sandwich.
  9. Press sweetened coconut flakes around the edges of the filling on each sandwich cookie for added flair.
