- 1 lb. limes (4–5 limes), juiced (about ⅔ cup or 5 ounces lime juice)
- 1 medium orange, juiced (about ⅓ cup or 2 ½ ounces orange juice)
- 2 teaspoons pure honey or agave syrup, optional
- 8 ounces (1 cup) good-quality tequila
- 16 ounces unsweetened coconut water
- ice
- sparkling water
- optional: coarse salt for rim, lime wedges or slices for serving
Instructions
- Juice the limes and orange into a pitcher or quart-size mason jar.
- Stir the honey or agave (if using) into the citrus juice mixture until fully dissolved.
- Add the tequila and coconut water, stirring well to combine.
- If desired, salt the rims of the glasses beforehand.
- Fill 4 glasses or pint-sized jars with ice, then divide the margarita mixture evenly among them.
- Top each glass with sparkling water. Garnish with lime wedges if desired and serve immediately.
- Place about ¼ cup coarse salt in a small dish.
- Rub a lime slice along the rim of each glass, then invert into the salt dish, twisting gently to coat the rim.
