Ingredients

  • 1 lb. limes (45 limes), juiced (about ⅔ cup or 5 ounces lime juice)
  • 1 medium orange, juiced (about ⅓ cup or 2 ½ ounces orange juice)
  • 2 teaspoons pure honey or agave syrup, optional
  • 8 ounces (1 cup) good-quality tequila
  • 16 ounces unsweetened coconut water
  • ice
  • sparkling water
  • optional: coarse salt for rim, lime wedges or slices for serving

Instructions

  1. Juice the limes and orange into a pitcher or quart-size mason jar.
  2. Stir the honey or agave (if using) into the citrus juice mixture until fully dissolved.
  3. Add the tequila and coconut water, stirring well to combine.
  4. If desired, salt the rims of the glasses beforehand.
  5. Fill 4 glasses or pint-sized jars with ice, then divide the margarita mixture evenly among them.
  6. Top each glass with sparkling water. Garnish with lime wedges if desired and serve immediately.
  7. Place about ¼ cup coarse salt in a small dish.
  8. Rub a lime slice along the rim of each glass, then invert into the salt dish, twisting gently to coat the rim.
