- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup butter
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 2 cups strawberry ice cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter, sugar, and brown sugar until well blended.
- Beat in the egg until the mixture is smooth.
- In a separate bowl, combine the rolled oats, all-purpose flour, cinnamon, and baking soda.
- Gradually mix the dry ingredients into the wet mixture until well combined.
- Scoop portions of dough onto a baking sheet and flatten each slightly with your fingers.
- Bake for about 10–12 minutes or until the edges turn golden brown.
- Allow the cookies to cool completely on a wire rack.
- Once cooled, scoop the strawberry ice cream between two cookies and press gently together.
- Place in the freezer until firm before serving.
