- 1 cup long grain white rice (such as jasmine or basmati)
- 1 ½ cups water
- ¼ teaspoon fine salt
- Zest and juice of 1 medium lime (2 tablespoons juice + 1 teaspoon zest)
- ½ cup loose-packed finely chopped fresh cilantro
Instructions
- Heat a large saucepan over medium-high heat. Add the avocado oil and rice, stirring constantly for 1 minute to toast the rice.
- Pour in the water and sprinkle in the salt; stir to combine.
- Bring the mixture to a boil over high heat, stirring occasionally to prevent sticking. Once boiling, cover the pan and reduce the heat to low.
- Let it simmer covered until the water is absorbed and the rice is tender, about 13 to 15 minutes.
- Remove the saucepan from heat, keeping it covered for 10 minutes to allow the rice to steam.
- After 10 minutes, remove the lid and stir in the lime zest, lime juice, and chopped cilantro. Fluff the rice with a fork and serve warm.
- Store any leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
