  • 1 cup long grain white rice (such as jasmine or basmati)
  • 1 ½ cups water
  • ¼ teaspoon fine salt
  • Zest and juice of 1 medium lime (2 tablespoons juice + 1 teaspoon zest)
  • ½ cup loose-packed finely chopped fresh cilantro

Instructions

  1. Heat a large saucepan over medium-high heat. Add the avocado oil and rice, stirring constantly for 1 minute to toast the rice.
  2. Pour in the water and sprinkle in the salt; stir to combine.
  3. Bring the mixture to a boil over high heat, stirring occasionally to prevent sticking. Once boiling, cover the pan and reduce the heat to low.
  4. Let it simmer covered until the water is absorbed and the rice is tender, about 13 to 15 minutes.
  5. Remove the saucepan from heat, keeping it covered for 10 minutes to allow the rice to steam.
  6. After 10 minutes, remove the lid and stir in the lime zest, lime juice, and chopped cilantro. Fluff the rice with a fork and serve warm.
  7. Store any leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
