  • 1 ¾ cups (250g) all-purpose flour

  • 1 teaspoon baking soda
  • 1 ½ cups (300g) granulated sugar
  • ¾ teaspoon salt
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • ¼ cup (60ml) full fat plain yogurt
  • ½ cup (120ml) whole milk
  • 1 teaspoon (5ml) pure vanilla extract
  • 10 ½ oz (300g) pure milk chocolate
  • â…“ cup (80ml) light 10% cream
  • 1 tablespoon (6g) cocoa powder (optional)
  • 2 tablespoon (30ml) full fat plain yogurt
  • â…› teaspoon salt

Instructions

  1. Preheat the oven to 325°F. Prepare a 13×18 inch half sheet pan with cooking spray or butter and line with parchment paper.
  2. Boil a kettle of water, prepare the coffee, and keep it warm if using.
  3. Sift together the flour, cocoa powder, baking powder, and baking soda into a large bowl. Mix in the sugar and salt.
  4. In a separate bowl, whisk together the eggs, oil, yogurt, milk, and vanilla. Combine with the dry ingredients until smooth.
  5. Gradually add the hot water or coffee to the batter, mixing until smooth and thin.
  6. Pour the batter into the pan and tap to remove air bubbles. Bake for 25-28 minutes until a skewer comes out clean. Allow the cake to cool completely on a wire rack.
  7. Chop the milk chocolate and place it in a heatproof bowl. Heat the cream until it simmers, then pour over the chocolate. Stir until smooth.
  8. Sift in cocoa powder, add yogurt and salt, and mix gently. Let cool until thickened.
  9. Once the ganache is thick, pour it over the cooled cake and spread evenly. Refrigerate for 15-20 minutes to set, then slice and serve.
