Instructions
- Preheat the oven to 350° F and line a sheet pan with parchment paper.
- In a mixing bowl, beat the softened butter and sugar together on medium high speed until light and creamy, which takes about 4 minutes.
- Add each egg one at a time, mixing thoroughly after each addition. Follow with the vanilla extract.
- In another bowl, combine the all-purpose flour, cocoa powder, baking soda, and salt. Gradually incorporate this dry mixture into the wet ingredients until just combined.
- Using a cookie scoop, scoop the dough onto the lined sheet pan, forming balls.
- Bake the cookies for about 9 minutes, or until their centers puff and crack slightly.
- Allow the cookies to cool on the pan for 2 minutes, then gently press a peanut butter cup into the center of each one.
- Melt the creamy peanut butter in the microwave in 30-second increments until smooth and pourable. Drizzle this over the cooled cookies and let it set for approximately 20 minutes, or chill for 10 minutes to speed up the process.
- Store any leftover cookies in an airtight container.
