  • 1 ½ cups olive oil
  • 2 cups granulated sugar
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ cup mini semi-sweet chocolate chips
  • 4 eggs room temperature
  • 1 cup full-fat sour cream
  • 1 tablespoon vanilla
  • 2 tablespoons melted butter
  • ¼ cup cocoa powder
  • 1 cup dark chocolate 60%-78% dark
  • 1 cup heavy cream
  • 1/4 to 1/2 cup mini chocolate chips for sprinkling on top

Instructions

  1. Preheat the oven to 350° F.
  2. In a medium bowl, combine chopped chocolate, cocoa powder, and optional espresso powder. Pour boiling water over the mixture and stir until a paste forms, microwaving if necessary.
  3. Stir in olive oil into the chocolate mixture until well combined and set aside to cool.
  4. In a large bowl, mix sugar, flour, salt, baking powder, baking soda, and mini chocolate chips and set aside.
  5. Add eggs, sour cream, and vanilla to the cooled chocolate mixture and stir until thick and fully combined.
  6. Brush a Bundt pan with melted butter and coat with cocoa powder, shaking off excess.
  7. Pour the chocolate mixture into the dry ingredients and gently fold until no streaks remain. Fill the Bundt pan with the batter and smooth the top.
  8. Bake for 35-45 minutes, until the cake bounces back when touched and a toothpick inserted comes out with slight crumbs.
